Food, seasonality and the land
Food is a big part of life here, so we treat it that way.
We grow as much as we can on the farm and build our menus around what’s actually in season. What we can’t grow, we source as locally as possible — from farmers, makers and suppliers we know and trust.
It keeps things fresher, more interesting, and avoids a lot of unnecessary waste along the way.
We also have our own range of spirits, created with a local distillery and inspired by the Silchester Eagle — one of the most significant Roman finds in the area. It’s a small detail, but it ties what we serve back to where we are, which matters to us.
Alongside that, we work with people like Sapling Spirits, using refillable pouches instead of bottles. For every equivalent sold, trees are planted back into the land here — adding to the rewilding and future foraging on the farm.
More broadly, we try to run things in a way that makes sense:
growing and using what we can
keeping menus seasonal to avoid excess
composting and reusing where possible (coffee grounds included)
choosing refillable, natural cleaning products and toiletries
buying second-hand and repurposing materials rather than always buying new
working with local florists, photographers and makers
Even the sheep play their part — our rare breeds keep the grass down better than most machinery could, and with considerably more character.

There’s nowhere quite like Silchester
And we’re not just saying that. This small corner of Hampshire happens to sit on the site of Calleva Atrebatum — one of the best preserved Roman towns in Britain, founded as an Iron Age settlement long before much of southern England was even on the map.
Silchester Farm sits right in this ancient Roman city – a place where people have been gathering for thousands of years.
You still feel that when you arrive.
The line of poplar trees leading up to the farm isn’t just for show. Traditionally, poplars were planted around places where people came together — meeting points, shared spaces, moments that mattered. It feels fitting that they now lead people here for exactly the same reason.
We are pretty relaxed here at Silchester Farm, but one thing we take really seriously is the impact we leave on the world from doing what we’re doing.
Hospitality in general creates a mountain of waste, and it is our mission to keep our contribution to that mountain as small as possible. Here are a few of the things we are doing to make a little difference:
- We forage from our land – fruit, veg, herbs & nuts – all used in bar and kitchen creations
- We compost all our fruit and garden waste
- We work with Grundon to recycle all our glass, cardboard, cans and food waste
- We champion British sparkling wine and buy from local Hampshire based vineyard Coates and Seely
- Our bars are plastic free
- We use wheat stalk straws
- Our napkins are made from 100% recycled materials and are fully compostable
- 40% of our soft drinks are in cans as it has a 36% smaller carbon impact than bottles
- We buy our beer from local breweries
- Our coffee bags are 100% compostable and help fund women’s education in Africa
- We support a native species planting scheme
- We encourage car sharing and group travel to and from our venue
- We encourage our beautiful rare breed sheep to do the mowing
- We hire locally where possible to reduce travel and support our community
- We serve sustainably sourced water
- We use handblown Hampshire glassware where possible
- We stock refillable toiletries in our accommodation
- We have replaced and renewed all of the insulation in all of our buildings to reduce the need for heating and cooling
- We use vintage and pre-owned furniture as much as possible
- Our vodka is supplied in recyclable pouches rather than bottles to reduce glass recycling – and for every one we buy, we get a native sapling to plant right here on the farm.
- Our gin bottles are refilled by our distillery
- We offer an extra recycling scheme to dispose of single use event waste responsibly

Supporting the local community
We partner, support and promote:
- Local events and charities
- Sustainable florists who buy locally grown flowers, use foam free methods and reduce waste and the use of harmful products
- Hiring of dried flowers and alternative decorations to reduce waste
- Locally sourced antique and second hand furniture, artwork and decorative pieces
- We upcycle materials from around the farm in our renovations (much to the delight of our craftsmen). Check out the fallen oak branch for our handrail (in the Hampshire Threshing Barn) the old barn door for our kitchen counter, and of course the beer kegs in the gents (use your imagination!)
- The local cricket team and youth football, alongside Silchester Village Association and Silchester School.
- Free tree planting and educational field trips for the local school.
